COPYCAT WHOLE HOG POTATO SALAD
The potato salad for people who hate potato salad.
I lived in Little Rock, Arkansas for a few years before moving back to Texas, and if you’ve ever been, you’ve probably had Whole Hog BBQ. (It’s even in the Little Rock Airport). It’s amazing bbq, one of Josh’s favorites of all time in fact.
Everything is fantastic (especially the spicy bbq sauce), but my absolute favorite thing is the potato salad. Which is actually kind of shocking, because I don’t really like potato salad…
I’d been trying to make this sour cream based potato salad all summer, when my friend Jennifer took pity on me and tested it for me along side the real deal to give me the feedback I desperately needed. The result is what I would call a dang good copycat for all us Arkansas expats.

Copycat Whole Hog Potato Salad
I’m so picky when it comes to potato salad, and if you love Whole Hog as much as I do you’re going to love this one!
Ingredients
Instructions
- Wash and slice potatoes.
- Bring a big pot of water to a boil and add the sliced potatoes. Cook until fork tender.
- Once cooked, mix together with all ingredients while still warm. (I save a little bacon and chives to put on top before serving.)
- Refrigerate for at least a few hours prior to serving.
