This chicken spaghetti is creamy with a touch of spice and a bit of garlic.

I won't pretend this is health food. But it is a comfort food favorite in our house, and it is exactly what you want to hand to a neighbor who just had a baby, is recovering from something, or just needs a meal that feels like a hug.

CREAMY CHICKEN SPAGHETTI

Creamy chicken spaghetti made in one pot with Rotel, Velveeta, and shredded chicken. A Southern comfort food dinner that feeds six to eight in 40 minutes.

Instructions

  1. Boil chicken in a large pot of salted water. When chicken is done, remove from pot and shred/set aside.
  2. Keeping water at a boil, add spaghetti noodles and cook for 8 to 10 minutes, until al dente. When done, drain broth.
  3. Return the cooked spaghetti to the pot on the stove over low heat.
  4. Add shredded chicken, soup, rotel and cheese.
  5. Season with salt, pepper and garlic powder to taste.
  6. When cheese is melted, dinner is ready!
