Old Fashioned Peanut Brittle (Adeline's Recipe)

Adeline's old fashioned peanut brittle, cooked to hard crack and broken into shards. A candy thermometer and about half an hour is all it takes.

- Combine Syrup, Sugar & water in large saucepan.
- Using a candy thermometer, bring mixture to “hard ball stage” (250-265 degrees F).
- Add peanuts and continue to cook until mixture reaches “Crack Stage” (300-310 degrees F).
- Remove from heat. Add butter, vanilla, soda and salt. Stir until blended. (This will bubble up a lot when you add the soda/salt.)
- Pour into a well buttered 9X13 pan.
- When cool break into pieces.
