Copycat Whole Hog Potato Salad

I lived in Little Rock, Arkansas for a few years before moving back to Texas, and if you’ve ever been, you’ve probably had Whole Hog BBQ. (It’s even in the Little Rock Airport). It’s amazing bbq, one of Josh’s favorites of all time in fact.

Everything is fantastic (especially the spicy bbq sauce), but my absolute favorite thing is the potato salad. Which is actually kind of shocking, because I don’t really like potato salad…

I’d been trying to make this sour cream based potato salad all summer, when my friend Jennifer took pity on me and tested it for me along side the real deal to give me the feedback I desperately needed. The result is what I would call a dang good copycat for all us Arkansas expats. Y’all let me know what you think!

Copycat Whole Hog Potato Salad

Description

I’m so picky when it comes to potato salad, and if you love Whole Hog as much as I do – you’re going to love this one!


Ingredients

Scale
  • 1.75 lb red potatoes
  • ½ TBS Sugar
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp dry parsley
  • 1 tsp salt
  • 1 tsp dry ranch dressing mix
  • ¼ cup chives
  • 1 cup cooked bacon crumbled (about 12 slices)
  • 1 cup sour cream
  • ½ cup mayo
  • ½ TBS white vinegar

Instructions

  • Wash and slice potatoes.
  • Bring a big pot of water to a boil and add the sliced potatoes. Cook until fork tender. 
  • Once cooked, mix together with all ingredients while still warm. (I save a little bacon and chives to put on top before serving.)
  • Refrigerate for at least a few hours prior to serving. 

Notes

  • Can double for a large crowd.
  • I know it feels like a lot of bacon, but trust me and go with it.
  • Prep Time: 30 minutes
  • Cook Time: 3 hours

      I followed this recipe to the T except I added the whole pkg of Ranch. More spice yet not to salty. My family loved it. Don’t be afraid to add more ranch!😋

    Absolutely the best potato salad made 6x fed 100 people perfectly and really got it don’t quick was surprises how fast we got it done tip make your bacon about 1 hour early so the grease has time to drain out

    This is great! I had an idea that I wanted a Cajun potato salad (boiling the potatoes in crab boil) but needed a good sour cream base to compliment the spicy crab boil. Combining the two was just perfect. Thanks for the recipe!

    As a life-long central Arkansan, Whole Hog is the ONLY barbecue restaurant that I patronize. Your recipe for their potato salad is 100% spot on! I have made it multiple times, and everyone always loves it. I’ve found that making it a day ahead really brings out the flavor. I made a batch today for tomorrow’s Super Bowl Sunday.
