I feel like this picture is a bit mis-leading. It looks a lot like salsa, IT IS NOT SALSA. If you make this expecting it to be salsa you will be disappointed. So, release your expectations and you will fall in love with this tomato dip!

It is amazing. It tastes so fresh and is good with either tortilla chips or ruffles potato chips (it has to be ruffles, I don’t know why it just does).

My mom has been making this for years and it is so delicious and the perfect use for all of those juicy summer tomatoes. That’s her big tip, do not use Roma or cherry tomatoes, in her words, “It has to be those big, juicy, seedy tomatoes”.

It’s also crazy addicting, and famous… at least to us. Y’all let me know what you think!

Ingredients

Scale
  • 6–7 Tomatoes (big, juicy, seedy tomatoes)
  • 1 Small Can of Diced Green Chiles
  • 1 Small to Medium Sweet Onion
  • 1 & 1/2 TBS Olive Oil
  • 2 TBS Apple Cider Vinegar
  • 2 tsp Garlic Powder
  • 1 tsp Salt
  • 1/2 tsp Pepper

Instructions

  • Add green chiles, oil, acv, garlic powder, salt & pepper to large bowl. 
  • Dice onion and add to bowl, then finely chop tomatos and add to bowl as well. 
  • Refrigerate for at least 1 hour, then taste and adjust seasonings as needed. 

Notes

  • Use big juice tomatoes with all of their juices/seeds. DO NOT use Roma or cherry tomatoes.
  • Sometimes Mom will add 2 small cans of green chiles, or more onion. Feel free to add more of what you like best!
  • Depending on size of tomatoes you may need to adjust seasoning, but be sure and chill for at least an hour before adding more seasoning (gives it time to meld together).
  • Prep Time: 25 minutes
  • Cook Time: 1 hour
