Mom’s Peanut Patties

This is and old school, traditional holiday candy and a family favorite of ours! It’s chewy, delicious, and surprisingly easy to make. As long as you have someone to stir…(This is the hardest part, I never make this unless I have an extra person around to trade off stirring.)

You definitely need a candy thermometer to make this one, but they are inexpensive and so worth it. Y’all give it a try and let me know what you think!

Mom’s Peanut Patties

Description

Similar to peanut brittle, but with a chewier texture. It’s a southern staple for good reason! 


Ingredients

3 Cups Sugar

1 Cup Karo Syrup
1 Cup Water
1 lb (3 Cups) Raw Spanish Peanuts
3/4 tsp Red Food Coloring (or a drop or two of gel coloring)
1/4lb Margarine
1/2 tsp Salt
1 TBS Vanilla

Instructions

Add Sugar, Karo Syrup, Water, Peanuts and food coloring to saucepan and using a candy thermometer, bring to 240 degrees. (Be sure thermometer is in the middle of the mixture and not touching the pan.)

 
Remove from heat and add margarine, salt and vanilla. 
Beat until the mixture looses its luster and sets a bit. 
Pour onto buttered cookie sheet, or parchment paper. Can also drop into patties. 
Let cool and serve!
