Here’s another amazing, old fashioned recipe from dear Adeline.

Don’t be intimidated by candy making. This does require a candy thermometer, but other than that, it’s just watching the temperature! This is my dad’s favorite holiday candy, I could make a batch just for him, in fact I have before… Y’all let me know what you think!

Adeline’s Peanut Brittle

Description

Here’s another amazing, old fashioned recipe from dear Adeline. Crunchy and sweet – the BEST brittle!


Ingredients

Scale

1 Cup Karo Syrup

2 Cups White Sugar

1/2 Cup Water

12 oz Raw Peanuts

2 TBS Butter

2 tsp Vanilla

2 tsp Baking Soda

1/2 tsp Salt


Instructions

Combine Syrup, Sugar & water in large saucepan. 

Using a candy thermometer, bring mixture to “hard ball stage” (250-265 degrees F).

Add peanuts and continue to cook until mixture reaches “Crack Stage” (300-310 degrees F).

Remove from heat. Add butter, vanilla, soda and salt. Stir until blended. (This will bubble up a lot when you add the soda/salt.)

Pour into a well buttered 9X13 pan.

When cool break into pieces.
