This is one of my favorite comfort foods. It’s hearty, packed with veggies, full of flavor and incredibly easy to make!
My mom would always make this on cold days and it’s perfectly accompanied by some cornbread. That’s all I have to say other than it should make it onto your winter menu. Y’all let me know what you think!

Ingredients

- 1 Packet McCormick Beef Stew Seasoning
- 1–2 tsp Brown Sugar
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 – 15oz can Whole Kernel Corn
- 1 – 15oz can LeSuer Peas
- 1 – 15oz can Diced Tomatoes
- 1–1.5 lb Ground Beef
- 1/2 Yellow Onion (chopped)
- 12oz Diced Potatoes (3–4 Red or 1 large Russet)
- 4 beef Bullion Cubes
- 4 Cups Water
- Or 4 Cups Beef Broth
Instructions
- In large pot, brown ground beef util no longer pink.
- Drain fat and add chopped onions and cook for another 3-4 minutes
- Add Beef Stew Seasoning Packet and cook into meat for a couple of minutes.
- Add all of the other ingredients (do not drain canned vegetables, add with liquid) and bring to a boil.
- Once boiling, reduce heat and let simmer until potatoes are fork tender.
- Serve with Cornbread.
Notes
You can either use beef bullion with water, or replace with 4 cups of beef broth.
