Lucky for me during grilling season, all I really have to worry about are the sides, and if I can keep dishes to a minimum – all the better!.

I love fresh summer squash and zucchini and this method of cooking them is so easy – we’ll be eating it all summer (my favorite is with steaks or grilled chicken).
Use whatever seasoning you like, but if you haven’t tried Meat Church – I highly recommend it (not just for veggies of course)! Y’all let me know what you think!

Grilled Zucchini & Squash

Ingredients

- 2 Zucchini
- 1 Yellow Squash
- Olive Oil
- Seasoning – We love “Holy Cow” from Meat Church or Lawry’s Seasoned Salt
- 1 Lemon
Instructions
- Slice zucchini & squash length wise (we use a mandolin to make them uniform).
- Toss in glug of olive oil and sprinkle with seasoning until well coated.
- Place on hot grill and cook each side for about 10 minute (depending on thickness).
- After removing from grill, squeeze fresh lemon juice on top of vegetables and serve immediately.
