- 2 lbs. Fresh Peaches
- 3/4 – 1 & 1/4 Cup Granulated Sugar (Depends on sweetness of peaches)
- 2.5 TBS Fresh Lemon Juice
Instructions
- Pour the lemon juice into a large sauce pan. (I use my enamel cast iron dutch oven.)
- Peel, pit and chop peaches into small pieces. Add peaches to the lemon juice as you chop and stir each time to coat. (This prevents them from turning brown.)
- Pour sugar over peaches and stir. Let mixture sit at room temperature for at least 1 hour.
- Bring mixture to a boil over med-high heat, stirring occasionally. Then reduce head to medium and simmer for about 1 hour – until the juice has reduced and become thick and jelly-like.
- As it begins to thicken you will need to stir more frequently to prevent scorching.
- Pour hot mixture into jelly jars, leaving about 1/4 inch at the top.
Notes
- This makes one large jar of preserves or a couple of small jars. If making 1 large jar, you will not need to seal. Just put in fridge and enjoy within 3 weeks.
- An easy way to tell when your preserves are done, is to put a small glass dish in the freezer – take it out and add a bit of the preserves to the dish and see how it sets. (It helps cool it quickly so you can tell the texture.)
