Creamy Taco Soup

It’s officially soup season in the Midwest and we’ve made this one 3 times in the last month! It started out as me trying to figure out something to make and not go to the grocery store and ended up being a go to favorite of ours.

It’s delicious and so easy to throw together. Y’all let me know what you think!

Creamy Taco Soup

Description

This Creamy Taco Soup is so delicious and so easy to throw together. Ultimate comfort food.


Ingredients

Scale
  • 1 – 1.5 lbs Ground Beef
  • 1 Medium Yellow Onion (diced)
  • 1 Red Bell Pepper (Diced)
  • 2 Packets Taco Seasoning (We like McCormick’s)
  • 1 can Rotel
  • 1 can Black Beans (rinsed and drained)
  • 1 10oz bag Frozen Corn
  • 3 cans Chicken Broth
  • 8 oz Heavy Cream

Instructions

  • In large pot brown ground beef and drain fat. 
  • Add diced onions and cook for 2-3 minutes.
  • Then add taco seasoning and cook into meat for a few minutes.
  • Add all ingredients EXCEPT the heavy cream.
  • Let simmer for 20-30 minutes.
  • Turn off heat and stir in cream when ready to serve. 
  • Garnish with your favorite taco toppings! Avocado, jalapeños, cilantro, tortilla chips, etc.
