It’s officially soup season in the Midwest and we’ve made this one 3 times in the last month! It started out as me trying to figure out something to make and not go to the grocery store and ended up being a go to favorite of ours.

This Creamy Taco Soup is so delicious and so easy to throw together. Ultimate comfort food.
Ingredients

- 1 – 1.5 lbs Ground Beef
- 1 Medium Yellow Onion (diced)
- 1 Red Bell Pepper (Diced)
- 2 Packets Taco Seasoning (We like McCormick’s)
- 1 can Rotel
- 1 can Black Beans (rinsed and drained)
- 1 10oz bag Frozen Corn
- 3 cans Chicken Broth
- 8 oz Heavy Cream
Instructions
- In large pot brown ground beef and drain fat.
- Add diced onions and cook for 2-3 minutes.
- Then add taco seasoning and cook into meat for a few minutes.
- Add all ingredients EXCEPT the heavy cream.
- Let simmer for 20-30 minutes.
- Turn off heat and stir in cream when ready to serve.
- Garnish with your favorite taco toppings! Avocado, jalapeños, cilantro, tortilla chips, etc.
