Cowboy Cookies

If you’re looking for a new cookie to try, I highly suggest this one. It tastes a little more complex than a classic chocolate chip cookie and slightly chewy – maybe chewy is the wrong word – anyway, they’re great.  

 A cowboy cookie is a hybrid between a chocolate chip cookie and an oatmeal cookie. My recipe is a little simpler than the one from the Texas Governor’s Mansion, but delicious all the same. I’m not sure if we’ve been without them the past couple months… 

They make pretty large cookies, and you can absolutely make them smaller, but I think the texture is best with the large scoops! Y’all let me know what you think!

Description

A cowboy cookie is a hybrid between a chocolate chip cookie and an oatmeal cookie. It tastes a little more complex than a classic chocolate chip cookie and slightly chewy. Add it to your baking list ASAP!


Ingredients

Scale
  • 1 C Butter (softened)
  • 1 C Granulated Sugar
  • 1 C firmly packed Light Brown Sugar
  • 2 Large Eggs
  • 1.5 tsp Vanilla Extract
  • 2 C All-Purpose Flour
  • 1 tsp Baking Soda
  • ½ tsp Baking Powder
  • ½ tsp Salt
  • 1 ¾ C uncooked Regular Oats
  • 1 12oz package Semisweet Chocolate Morsels (about 2 Cups)
  • 1 Cup chopped Pecans

Instructions

  • Preheat oven to 350 degrees.
  • Beat butter at medium speed with an electric mixer until creamy. Gradually add in sugars, beating at medium speed until light and fluffy. Add eggs (1 at a time), beating well after each addition. Beat in Vanilla.
  • Combine Flour, baking soda, baking powder & salt in large bowl, then stir in oats. Gradually add flower mixture to sugar mixture – beating at low speed until just combined. Stir in chocolate morsels and pecans.
  • Drop onto parchment paper lined cookie sheet using a 2 oz ice-cream scoop (or using a ¼ cup) about 3 inches apart. Chill 20 minutes or until firm.
  • Bake at 350 degrees for 16-18 minutes or until cookies are set (lightly brown around the edges), rotating the pan after about 12 minutes. Cool on pan for 2-3 minutes then transfer to a cooling rack.

Notes

  • For smaller cookies, use a 1 ounce scoop, or drop by 2 TBS and decrease bake time to 12-14 minutes. (I prefer the texture of the larger cookies.)
  • If you like salty sweet, sprinkle a little sea salt on top as soon as they come out of the oven. 
  • Prep Time: 25 minuets
  • Cook Time: 20 minutes
