Bruschetta Pasta Salad

I don’t always love pasta salads, but this one definitely makes the cut. Loaded with fresh tomatoes, basil, parmesan cheese and noodles this salad is a must make side dish!

And like all things I make, it’s stupid easy – and like most things I make, you can make it ahead of time. Y’all let me know what you think!

Bruschetta Pasta Salad

Ingredients

Scale
  • 1 lb. Orecchiette Pasta
  • 1/2 Cup Olive Oil
  • 2 TBSP Balsamic Vinegar
  • 1 Clove Garlic, Minced
  • 1 Pt. Cherry Tomatoes, (preferably multi-colored, halved)
  • 1/4 c. torn basil, for garnish
  • 1/4–1/2 Cup Shredded Mozzarella
  • 2 tsp Salt
  • 1 tsp Pepper

Instructions

  • Cook orecchiette according to package directions, then drain and set aside. 
  • In small bowl whisk together olive oil, balsamic vinegar, salt & pepper.
  • In large bowl add pasta, garlic & tomatoes. Add dressing and toss to combine. 
  • Garnish with basil and serve.
  • Prep Time: 20 minutes
