I don’t always love pasta salads, but this one definitely makes the cut. Loaded with fresh tomatoes, basil, parmesan cheese and noodles this salad is a must make side dish!
And like all things I make, it’s stupid easy – and like most things I make, you can make it ahead of time. Y’all let me know what you think!
PrintBruschetta Pasta Salad
- Total Time: 20 minutes

Ingredients

- 1 lb. Orecchiette Pasta
- 1/2 Cup Olive Oil
- 2 TBSP Balsamic Vinegar
- 1 Clove Garlic, Minced
- 1 Pt. Cherry Tomatoes, (preferably multi-colored, halved)
- 1/4 c. torn basil, for garnish
- 1/4–1/2 Cup Shredded Mozzarella
- 2 tsp Salt
- 1 tsp Pepper
Instructions
- Cook orecchiette according to package directions, then drain and set aside.
- In small bowl whisk together olive oil, balsamic vinegar, salt & pepper.
- In large bowl add pasta, garlic & tomatoes. Add dressing and toss to combine.
- Garnish with basil and serve.
