These beef taquitos are a tried and true family staple! My mom has been making these for us for as long as I can remember and they’re super kid friendly (leave out the chilis if your kids don’t like any spice). The original way she makes them is deep frying, but we’ve been making them in the air fryer and we think it’s just as good!

Tried and true family favorite. You can either deep fry these beef taquitos or use an air fryer!
Ingredients

- 2 lbs Ground beef
- 20 Corn Tortillas
- 8–10 oz Velveeta
- 1 Can Rotel
- 1 small Can Diced Green Chilis
- Salt & Pepper
- Spray oil
- Toothpicks
Instructions
For Taquitos
- Brown ground beef, drain fat, salt and pepper to taste.
- Add rotel, green chilis and velveeta until melted.
- Spoon into tortillas (I normally warm 4 at a time and use 1 big spoonful), and roll keeping together with a toothpick.
- Preheat oven to 250 degrees.
Air Fryer Instructions
- Add to air fryer in single row at 350 degrees and spray tops of taquitos with oil. (Normally 3-4 at a time depending on the size of your air fryer.)
- Cook for 5-7 minutes.
- Put finished taquitos on a parchment or newspaper lined cookie sheet and keep in 250 degree oven to keep warm until all are fried.
- Serve with your favorite salsa!
Deep Frying Instructions
- Heat vegetable oil in large pot. Add taquitos to hot oil and fry until crisp. Normally 3-4 at a time.
- Put finished taquitos on a parchment or newspaper lined cookie sheet and keep in 250 degree oven to keep warm until all are fried.
- Serve with your favorite salsa!
