Grammy’s Banana Cake

Next time you have over-ripe bananas, you must give this recipe a try. Similar to banana bread, but more moist with a healthy ratio of frosting.

This is my Grammy’s recipe, but there’s 3 different frosting options. Grammy’s (banana frosting), my mom’s (classic buttercream frosting) and mine (cream cheese frosting). We all had our preferences, so you can choose what fits you best. (And trust me, about 1/2 inch of frosting is just right on this one.)

You may never go back to banana bread. Y’all let me know what you think!

Ingredients

Scale

Banana Cake

  • 1 1/2 Cup Sugar
  • 1/2 Cup Butter (softened)
  • 2 Eggs
  • 2 Cups Cake Flour
  • 4 Heaping TBSP Sour Cream
  • 1 tsp Baking Soda
  • 3–4 Very Ripe Bananas (crushed)
  • 1/2 Cup Walnuts or Pecans (chopped)
  • 1 tsp (Generous) Vanilla 

Grammy’s Banana Buttercream Icing

  • 2/3 Stick Butter (softened)
  • 1 lb Box Powdered Sugar
  • 2 Ripe Bananas (crushed)
  • 1 Cup Nuts (walnuts or pecans

Mama Penny’s Buttercream Icing

  • 1 lb Powdered Sugar
  • 6 tbsp Butter (softened)
  • 3–4 tsp Milk
  • 1 1/2 tsp Vanilla
  • 1/8 tsp Salt 

Sandy’s Cream Cheese Icing

  • 8oz Cream Cheese
  • 1/2 Cup Butter (softened)
  • 3 1/2 – 4 Cups Powdered Sugar
  • 2 tsp Vanilla 

Instructions

For Cake

  • Pre-heat oven to 350 degrees.
  • Cream butter and sugar together thoroughly. 
  • Add beaten eggs & sour cream and mix.
  • Then add cake flour & soda and mix until all incorporated.
  • Then add mushed bananas, vanilla and nuts. 
  • Grease a 9X13 pan and pour cake mixture inside. 
  • Bake for 25-35 minutes until toothpick comes out clean. 

For Icing:

  • Select which icing suites you best and mix all together until smooth.
  • Once cake is completely cool, smooth on top and enjoy!  

Notes

Can also use round pans and make a layer cake, would need to adjust cooking time down a bit.
