This Grapefruit Gin Fizz, is the perfect summer cocktail. It’s slightly tart/slightly sweet, has a little bit of fizz and is super refreshing, perfect for summer days. I hear we get those up here in Illinois…

What really sets this drink apart is the rosemary simple syrup. It’s super easy to make, but if you only have regular simple syrup, that’s totally fine – it’ll still be tasty!

I have two sets of recipes below, for either a single drink or a pitcher in case you have guests… or not. 🙂 Y’all let me know what you think!

Grapefruit Gin Fizz

Description

This Grapefruit Gin Fizz, is the perfect summer cocktail. It’s slightly tart/slightly sweet, has a little bit of fizz and is super refreshing, perfect for summer days.


Ingredients

Scale

Rosemary Simple Syrup

  • 1 cup water
  • 1 cup sugar
  • 1 package (about 8 sprigs) of rosemary

For 4 cocktails:

  • ¾ cup Freshly squeezed grapefruit Juice (about 2 grapefruits)
  • ¾ cup Gin (Hendricks)
  • Juice from 1 lime
  • ¼ cup Rosemary simple syrup
  • Sparkling water (Topo Chico)
  • Rosemary sprig for garnish

For 1 cocktail:

  • 1.5 oz Freshly squeezed grapefruit Juice (about 1/2 grapefruit)
  • 1.5 oz Gin
  • Juice from 1/4 lime
  • 0.5 oz Rosemary simple syrup
  • Sparkling water (Topo Chico)
  • Rosemary sprig for garnish

Instructions

Rosemary Simple Syrup:

  • In a small saucepan, heat rosemary sprigs, water and granulated sugar over medium-high heat. Bring mixture to a boil and stir until the sugar dissolves.
  • Remove from heat, cover and steep for 30-60 minutes. Remove rosemary sprigs and store in the refrigerator until ready to use. Can be made ahead of time.

Cocktail:

  • Combine gin, grapefruit juice, lime juice and rosemary simple syrup in a shaker filled with ice and shake.
  • Strain into a glass, filled with ice. Top with club soda/sparkling water, and give one final stir to combine.
  • Garnish with a rosemary sprig if you have them.

Notes

You can also use regular simple syrup, but the rosemary really gives it that fresh kick!
