This has become one of our favorite go-to breakfasts – we truly make it about 1-2 x’s a month! One reason is that we can whip it up on a lazy Sunday morning, and have it for breakfast for the first few days of the week (when we tend to be the busiest).
It also has just enough spice – we are big green chili fans. If quiche isn’t your thing, you can also grease a muffin tin and make little egg bites for on the go. Couldn’t be easier. Y’all let me know what you think!

Ingredients

- 1 lb Breakfast Sausage (we use turkey sausage in this one)
- 5 Large Eggs
- 1 Cup shredded Cheddar Cheese
- 1 small can Diced Green Chilis
- 1 Cup 1/2 & 1/2
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 TBS Flour
Instructions
- Preheat oven to 350 degrees.
- Brown sausage and drain.
- In large bowl whisk together eggs, 1/2 & 1/2, salt, pepper, and flour.
- Stir in drained green chilis, cheese and sausage.
- Pour into greased pie pan.
- Bake for 45-60 minutes, until eggs are set in the middle.
- Prep Time: 15 minutes
- Cook Time: 60 minutes
