We love chicken salad. There are so many chicken salad recipes out there, but this is my go to. It’s like all of the recipes I share – simple, delicious and customizable.
Growing up, Mom and Grammy used to make us a big container of chicken salad before we would start our road trip to the cabin every summer, I always loved it. I even had my mom (because everything tastes better if your mom makes it for you) make us a big tub before Josh and I moved to Chicago this past summer (in an R.V. – another story for another time).
Use your mayonnaise of choice, I personally like Miracle Whip, but use whatever you prefer. Same with the fruit, I love to use grapes, but you could substitute with craisins, apples or even pickles or sweet relish. Some people even add pecans. You do you, boo.
This makes a decent amount, enough to take to a shower with crackers or small croissants, but if you’re like us, you can also just make it on Sunday and use it for lunches/snacks for the week. Y’all give it a try and let me know what you think!

Ingredients
- 3 lbs Chicken Breast (cooked & shredded)
- 1 C Grapes (sliced)
- 1/3–1/2 C Yellow Onion
- 1 ¼ C Miracle Whip (or mayonnaise of choice)
- 1 TBS Jalapeno Juice
- 2 tsp Salt
Instructions
- Add all ingredients to large bowl and mix.
- Refrigerate for at least an hour prior to serving to allow flavors to meld.
- Serve with croissants, toast, crackers, etc.
Notes
- You can boil & shred chicken breast, or use rotisserie.
- Use your preferred mayonnaise, fruit, etc.
